Recipe: Salt and Sugar Cured Lemons

Ingredients

  • 3 lemons
  • 1/3 to 1/2 cup kosher salt
  • 1/3 to 1/2 cup sugar

Instructions

Step 1

Wash 3 lemons in hot water, use a sharp knife to cut into 1/8-inch thick slices.

Step 2

Add 1/3 to 1/2 cup kosher salt and 1/3 to 1/2 cup sugar in a bowl. Mix well.

Step 3

Add a layer of salt and sugar mixture at the bottom of a glass container. Add a layer of lemon slices, then another salt and sugar mixture, then another layer of lemon slices... Repeat until the glass container is almost full. Let cure for 3 days.
