Ingredients

  • 7-8 oz center-cut salmon filets, skin-on
  • 2 cups coarse kosher salt
  • 1 tablespoon black peppercorns
  • 2 teaspoon whole cloves
  • 8 whole star anise
  • 4 cinnamon sticks, broken up

Instructions

Step 1

Place the salmon fillets on the baking dish, and place a piece of paper on the fillets, the piece of paper should be big enough to cover the fillets.

Step 2

Seal the baking dish with a foil. Bake in an oven at 375F for about 20 minutes.
