Recipe: Root Beer Glazed Lamb

Ingredients

  • 1 tbsp vegetable oil
  • 6 large lamb shoulder blade chops - about 3 to 3 1/2 pounds
  • 1 bottle - 12 ounces good quality root beer
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup toasted sesame seed
  • 2 teaspoons smoked paprika
  • 1/2 teaspoon chipotle
  • 1/2 tablespoon dried rosemary - crushed
  • 1/2 cup water
  • additional toasted sesame seeds to garnish
  • 1/4 cup finely chopped green onions

Instructions

Step 1

Put a Dutch Oven over medium heat, Add a little oil. Put the lamb shoulder blade chops in, brown both sides of
each blade chop very well. Remove and set aside.

Step 2

Add 1 bottle (12 ounces) good quality root beer,
1/4 cup reduced sodium soy sauce,
1/4 cup honey,
1/4 cup toasted sesame seed,
2 teaspoons smoked paprika,
1/2 teaspoon chipotle,
and 1/2 tablespoon dried rosemary - crushed into the Dutch Oven.
Stir well. Bring it to a boil.

Step 3

Return the blade chops into the Dutch oven, distribute evenly. Pour over 1/2 cup water.

Step 4

Put the Dutch Oven into a preheat 325F oven, Cook for 1 1/2 hours.
Then Take the Dutch Oven out.

Step 5

After that, remove the lambs and leave the braising liquid in the Dutch Oven.
Put the Dutch Oven over high Heat. Reduce the liquid for about 10 minutes.
Get rid of the fat on the top of the liquid.

Step 6

Now Turn the heat on low, return the blade chops into the Dutch oven. Taste for seasoning.

Step 7

Transfer the lambs into a serving bowl, spoon over the sauce. Topped with some chopped onion and sesame seed.
