Recipe: Roasted Pork Tenderloin

Ingredients

  • 1 pork tenderloin, trimmed
  • salt and fresh ground black pepper to taste
  • 1/2 cup chicken broth
  • 1 tablespoon extra hot horseradish
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons cream
  • 1 teaspoon fresh chives
  • 1 tablespoon cold butter

Instructions

Step 1

Generously Season the the pork tenderloin with salt and pepper.

Step 2

Add some olive oil in a pan over high heat. Put the pork tenderloin in the pan. Sear both side well.

Step 3

Cook the pork tenderloin in an oven at 375F for 20-25 minutes. The internal temperature is 140-145F.

Step 4

Add 1/2 cup chicken broth in the pan on high heat. Bring it to a boil. Add 1 tablespoon extra hot horseradish,
1 tablespoon Dijon mustard,
1/4 teaspoon cayenne pepper,
and 2 tablespoons cream. Whisk well. Reduce to thicken. Turn off the heat. Whisk 1 tablespoon cold butter into the hot sauce. Add 1 teaspoon fresh chives.

Step 5

Cut the pork tenderloin into big slices. Transfer to a serving plate. Spoon over the sauce.
