Recipe: Roasted Corn Custard

Ingredients

  • 2 cups corn
  • 1 1/2 cup cream
  • 1/2 cup milk
  • 1 1/4 tsp salt
  • pinch of cayenne
  • 3 egg yolks
  • 2 eggs
  • butter

Instructions

Step 1

Add 2 cups corn,
1 1/2 cup cream,
1 1/4 tsp salt,
and pinch of cayenne in a pot over medium heat. Give it a stir. Bring it to a simmer, turn off the heat. Add 1/2 cup cold milk.

Step 2

Transfer the mixture to a blender, turn the blender on and off until blend the mixture well.

Step 3

Add 3 egg yolks in a bowl. Whisk well. Stir in the corn mixture.

Step 4

Distribute the mixture in 6 cups. Put these cups in a baking plate. Fill the baking plate with water, half way up. Bake them at 325F for 30-35 minutes.

Step 5

Remove the bowls, Cool them. Put the cup on a serving plate. Use a knife to go around the edges of the cup. Flip the cup and make the corn custard on the plate. You are ready to serve.
