Recipe: Roast Halibut Cheeks
Ingredients
- 1 Pound Wild Halibut Cheeks or Scallops or Tuna
- 3 Oz Pancetta or Bacon
- 1 Large Handful Pea Shoots Or Sprouts
- 1 Clove Garlic
- 1/3 Cup Rice Vinegar
- 1 Tsp Dijon Mustard
- Black Pepper
- Salt
- 2 Tbl Olive Oil
- 1 Lemon
Instructions
Step 1
Cut 3 Oz Pancetta or Bacon into small piece, about 2 inch long.
Step 2
Add 1/3 Cup Rice Vinegar into a bowl. cut the lemon in half, squeeze the juice into the bowl.Add 1 Tsp Dijon Mustard, 1 crushed Clove Garlic. Mix well. Set aside.
Step 3
Cook the bacon in a pan over low heat.Meanwhile, season the Halibut Cheeks with black pepper, salt.
After cooking the bacon for 10 minutes, remove them from the pan.
Now put the Halibut Cheeks in the same pan. Cook about 2 minutes per side.
Remove Halibut Cheeks from the pan.
Step 4
Pour the vinegar mixture in.Turn the heat to low. Cook the sauce for about 2 minutes, keep stirring.
Step 5
Add in half Bacon, turn the heat off. Add 1 Large Handful Pea Shoots Or Sprouts, toss around for 30 seconds.Then top them on Spaghetti Squash.
