Recipe: Ricotta Salmon Tortellini

Ingredients

  • 5 oz salmon
  • 1/2 cup ricotta
  • 1/3 cup peas
  • 1/3 cup parmesan
  • 2 tbl fresh tarragon
  • square wonton skins
  • salt to taste
  • cayenne to taste
  • 1 cup cream
  • 1 lemon - zested and juiced
  • Italian parsley, tarragon, basil, dill

Instructions

Step 1

Dice and dice the salmon, and put into a large bowl.
Add 1/2 cup ricotta,
1/3 cup peas,
1/3 cup Parmesan,
and 3/4 spoon salt. Mix well.

Step 2

Then use a plastic to cover, and chill for 1 hour.

Step 3

Zest the lemon, and squeeze its juice to a cup with the lemon zest.
Add an egg with water into another bowl. Brush the egg and water mixture on the wonton skins.
Fill each wonton skin with 1 spoon the salmon mixture.
Fold it into a triangle. Press on the top, cross the wings, twist around.

Step 4

Put a sauce pan over medium heat, add the lemon sauce. Add 1 cup heavy cream.
As soon as it simmer, turn off the heat. Add some salt and cayenne.

Step 5

Bring a pot of salted water to a boil. Carefully drop in the Wontons. When the Wontons float on the top of the water,
Transfer them to a sauce pan over low heat. Stir around.
Add some Italian parsley, tarragon, basil, dill, etc. Stir well.

Step 6

Warm your bowl, Transfer the wontons to the bowl. Pour over the sauce, enjoy.
