Recipe: Ricotta Salmon Tortellini
Ingredients
- 5 oz salmon
- 1/2 cup ricotta
- 1/3 cup peas
- 1/3 cup parmesan
- 2 tbl fresh tarragon
- square wonton skins
- salt to taste
- cayenne to taste
- 1 cup cream
- 1 lemon - zested and juiced
- Italian parsley, tarragon, basil, dill
Instructions
Step 1
Dice and dice the salmon, and put into a large bowl.Add 1/2 cup ricotta,
1/3 cup peas,
1/3 cup Parmesan,
and 3/4 spoon salt. Mix well.
Step 2
Then use a plastic to cover, and chill for 1 hour.
Step 3
Zest the lemon, and squeeze its juice to a cup with the lemon zest.Add an egg with water into another bowl. Brush the egg and water mixture on the wonton skins.
Fill each wonton skin with 1 spoon the salmon mixture.
Fold it into a triangle. Press on the top, cross the wings, twist around.
Step 4
Put a sauce pan over medium heat, add the lemon sauce. Add 1 cup heavy cream.As soon as it simmer, turn off the heat. Add some salt and cayenne.
Step 5
Bring a pot of salted water to a boil. Carefully drop in the Wontons. When the Wontons float on the top of the water,Transfer them to a sauce pan over low heat. Stir around.
Add some Italian parsley, tarragon, basil, dill, etc. Stir well.
