Recipe: Raw Green Sauce

Ingredients

  • 2 large cloves garlic
  • pinch of salt
  • 2 teaspoon capers
  • 1 teaspoon anchovy paste
  • 1/4 cup packed Italian parsley leaves
  • 1 tablespoon white wine vinegar (or any vinegar or lemon juice)
  • 2 tablespoon olive oil

Instructions

Step 1

Add 2 large cloves garlic in a molcajete, or other mortar and pestle type grinding device. Smash them well. Add a pinch of salt. Smash for a couple times.

Step 2

Add 2 teaspoon capers,
1 teaspoon anchovy paste,
and 1/4 cup packed Italian parsley leaves. Grind well.

Step 3

Add 1 tablespoon white wine vinegar (or any vinegar or lemon juice)
and 2 tablespoon olive oil. Mix well.
