Pumpkin Seed Flatbread

Ingredients

  • cornmeal
  • prepared pizza dough - enough for 1 large thin pizza
  • 1 large onion
  • 2 tbsp olive oil
  • salt to taste
  • black pepper
  • 1/2 cup raw pumpkin seeds - or as much as you like
  • 4 oz Greek feta
  • 1/3 cup Parmesan

Instructions

Step 1

Slice the large onion up.

Step 2

Add one tbsp oil into a pan over a medium heat. When the pan is hot,
put in the onion slices.
Cook for 10 minutes, and throw in some salt.
Cook for another 5 minutes until the onion is soft, sweet and tender.

Step 3

Turn off the heat, let it cool.

Step 4

Spread cornmeal into a sheet pan. Then Place the prepared pizza dough into the pan. stretch thin.
Then spread the onion mixture on the dough.

Step 5

Spread 1/2 cup raw pumpkin seeds, 4 oz Greek feta, 1/3 cup Parmesan on the dough.

Step 6

Preheat the oven to 425F, and put the pan into a oven. Cook for 5 minutes on oven bottom.

Step 7

Rotate the pan, turn for even browning for about 5 minutes.
Finish on middle rack for about 5 minutes.

Step 8

The total cooking time is 10-15 minutes.

Step 9

Remove, slice them to serve.
