Recipe: Pumpkin Seed Flatbread
Ingredients
- cornmeal
- prepared pizza dough - enough for 1 large thin pizza
- 1 large onion
- 2 tbsp olive oil
- salt to taste
- black pepper
- 1/2 cup raw pumpkin seeds - or as much as you like
- 4 oz Greek feta
- 1/3 cup Parmesan
Instructions
Step 1
Slice the large onion up.
Step 2
Add one tbsp oil into a pan over a medium heat. When the pan is hot,put in the onion slices.
Cook for 10 minutes, and throw in some salt.
Cook for another 5 minutes until the onion is soft, sweet and tender.
Step 3
Turn off the heat, let it cool.
Step 4
Spread cornmeal into a sheet pan. Then Place the prepared pizza dough into the pan. stretch thin.Then spread the onion mixture on the dough.
Step 5
Spread 1/2 cup raw pumpkin seeds, 4 oz Greek feta, 1/3 cup Parmesan on the dough.
Step 6
Preheat the oven to 425F, and put the pan into a oven. Cook for 5 minutes on oven bottom.
Step 7
Rotate the pan, turn for even browning for about 5 minutes.Finish on middle rack for about 5 minutes.
Step 8
The total cooking time is 10-15 minutes.
