Recipe: Pumpkin Pancakes with Maple Syrups

Ingredients

  • Mix in one bowl:
  • 2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 1 tablespoon white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon table salt
  • Mix in another bowl:
  • 1 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1 egg
  • 1 1/2 cups milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 2 teaspoon grated lemon zest
  • Combine and make pumpkin pancakes!

Instructions

Step 1

Add 2 cups all-purpose flour,
2 tablespoons brown sugar,
1 tablespoon white sugar,
2 teaspoons baking powder,
1 teaspoon baking soda,
and 1/2 teaspoon table salt in a mixing bowl. Mix well.

Step 2

Add 1 cup pumpkin puree,
1 teaspoon ground cinnamon,
1/2 teaspoon ground ginger,
1/2 teaspoon ground allspice,
1 egg,
1 1/2 cups milk,
and 2 teaspoon grated lemon zest in another bowl. Mix well.
Add 2 tablespoons vegetable oil and 2 tablespoons lemon juice. Mix well.
Stir in the dry ingredients (the mixture of bowl one). Mix well.

Step 3

Add some olive oil in a pan over med-high heat. Use a scoop to transfer the mixture in the pan, 1/4 cup for each pancake. Flat them a little bit. Cook for 3 minutes per side.

Step 4

To serve, topped with some butter, maple syrups and pumpkin seeds.
