Recipe: Potato Pesto Pizza

Ingredients

  • cornmeal on pan
  • stretch pizza dough to cover
  • pesto sauce to cover
  • 4 roasted gold potatoes - sliced
  • salt and fresh ground black pepper to taste
  • parmesan to cover
  • 6 oz fontina cheese
  • 1/2 sliced red onion
  • more pesto dripped on top
  • 4 oz feta cheese crumbled on top

Instructions

Step 1

Add some cornmeal on a sheet pan, spread evenly.
Put a pizza dough on the sheet pan, stretch it thin.
Cover the dough with pesto sauce evenly.

Step 2

Roast 4 gold potatoes and slice them. Evenly spread the slices on the dough.
On the dough, drizzle some salt and pepper, Add some grated parmesan and 6 oz fontina cheese,
1/2 sliced red onion. Drip more pestoo on top, and add 4 oz feta cheese crumbled on top.

Step 3

Preheat oven to 425F, Put the sheet pan on the bottom of the oven.
After cooking for 10 minutes, move the sheet pan on the middle rack, and cook for another 5 minutes.
Cook more time if needed until the pizza becomes crisp.
