Recipe: Polish pastry - paczki
Ingredients
- 2 tbsp sugar
- 2 tsbp butter
- 1/2 cup of milk
- 1/4 tsp vanilla
- a pinch of salt
- 2 whole eggs
- 2 cups flour
- vegetable oil
Instructions
Step 1
Mix IngredientsTake 2 tbsp sugar, 2 tsbp butter into a bowl, heat 1/2 cup of milk in the microwave to about 110F, and pour it in. Add 1/4 tsp vanilla, a pinch of salt, and then 2 whole eggs.
Step 2
When The milk is cool, not scramble the eggs. Whisk those in, add 1 teaspoon of yeast. whisk them in to dissolve. Then add about a 1/2 cup at a time, totally 2 cups of flour.
Step 3
Keep adding in flour until you have a really stiff dough which can barely be stirred. Then transfer them on to the board. Put about 2 cups flour to knead it.
Step 4
Use the traditional kneading method To get a smooth, soft, sticky dough, that is using the palm of your hand. Kneaded that for about 5 minutes. Put that back in the bowl, cover it, and let that double in size. It takes about 1 - 1.5 hours.
Step 5
Shape the PackziPat paczki dough down on a lightly floured board. Roll it to about 1/2 inch thick. Use a little flour if you need. Then cut out little round paczki shapes.
Step 6
You can get about 12 from the batch. Re-roll the excess dough to cut a few more. Let those rise for about half an hour, or until doubled in size. Meanwhile, heat your oil to 350F. I used regular vegetable shortening.
Step 7
Fry the PackziFry these for about 2 minutes per side until they get beautiful golden-brown. Fish those out with a strainer and let them cool on a wire rack for at least 15 minutes before we fill them.
Step 8
Fill and Serve the PackziPackzi is traditionally filled with fruit jelly. Uses a pastry bag and tip. If you don't have that, just simply cut a spoon-sized slit in the side, and shove in a spoon of jelly. any kind of fruit jelly or jam will be fine. Clean up the sides.
