Recipe: Polenta with corn in 3 ways

Ingredients

  • 1/2 cup polenta
  • 2 1/2 cups water
  • salt and pepper to taste
  • 2 tsp butter
  • 1 tsp olive oil
  • 3 ears fresh corn (about 1 1/2 cups)

Instructions

Step 1

Use a sharp knife to take off the corns from the cobs.

Step 2

In a sauce pan over a heat, add 1 tsp butter, and 1 tsp olive oil. Give it a stir.
Then add 2/3 of the cornmeal, a pinch of salt, and a big shake of red pepper.
Saute on med-low heat for 8-10 minutes.

Step 3

Add 2 cloves crushed garlic. stir around and saute on low heat for 1-2 minutes.
Add 2 cups water, give it a stir.
Bring it to a boil on high heat. Add 1/2 cup polenta.
Whisk well. Turn the heat to low. simmer for 20 minutes.
Stir constantly.

Step 4

Add 1/2 cup water, and cook for another 10 minutes.
Add 1 tsp butter, and the remaining fresh corn. Stir well.
Turn off the heat, cover and let sit for 5 minutes.
