Recipe: Penne Pasta with Cherry Tomatoes sauce
Ingredients
- 2 cups Sun Gold cherry tomatoes
- 2 cups chicken broth
- 2 tbsp olive oil
- 2 cloves sliced garlic
- 1/2 tsp red pepper flakes
- 2 tbsp fresh oregano leaves
- 14-oz dry penne pasta - cooked
- salt to taste
- 1/2 cup grated real Parmesan cheese - Parmigiano-Reggiano
Instructions
Step 1
Put 2 cups Sun Gold cherry tomatoes into a sauce pan.Add 2 tbsp olive oil,
2 cloves sliced garlic,
and a big pinch of salt.
Saute these on med-low heat for 2-3 minutes.
Step 2
Add 2 cups chicken broth, bring it to a simmer, and cook for about 10 minutes oruntil the tomatoes begin to collapse.
Add 1/2 tsp red pepper flakes, and 2 tbsp fresh oregano leaves.
use a blender to blend the mixture. Blend well.
Step 3
Boil and drain 14-oz dry penne pasta. Transfer the pasta to a pot.Pour over the tomatoes sauce. Use a wood spetula to stir them for about 3 minutes.
Add 1/2 cup grated real Parmesan cheese, stir well. Taste and adjust the seasoning.
