Recipe: Pasta Fazoolander

Ingredients

  • 1 1/2 tablespoon olive oil
  • 1 teaspoon tomato paste
  • 1-2 anchovy fillet
  • 1 quart chicken, or vegetable broth
  • 1 cup dry tortelinni
  • 1 (15-oz) can white beans, drained
  • 2 cups packed baby spinach, roughly chopped
  • salt and fresh ground black pepper to taste
  • red pepper flakes
  • parmesan cheese

Instructions

Step 1

Put a pot over medium heat. Drizzle 1 1/2 tablespoon olive oil. Add 1 teaspoon tomato paste and 1-2 anchovy fillet. Stir around and cook for 3-4 minutes.

Step 2

Add 1 quart chicken, or vegetable broth. Turn the heat to high. Bring it to a rolling boil. Add 1 cup dry tortelinni.

Step 3

Meanwhile, rinse 1 (15-oz) can white beans. Add them in the pot. Also add red pepper flakes, some salt and pepper. Cook for about half an hour.

Step 4

When it is done, add 2 cups chopped baby spinach. Stir and cook for about 30 seconds.

Step 5

Transfer to a serving plate, add some red pepper flakes and parmesan cheese to garnish.
