Recipe: Pan Seared Scallops with Orange Supremes

Ingredients

  • 2 navel oranges
  • 1 large jalapeno pepper
  • 1/4 cup rice vinegar
  • 1/4 cup regular or light olive oil
  • 1/4 tsp Dijon mustard
  • salt and pepper to taste
  • 1 tablespoon grape seed, or vegetable oil
  • 12 large fresh scallops
  • salt and fresh ground black pepper to taste

Instructions

Step 1

Take 1 large jalapeno pepper, remove seeds and any white membranes.

Step 2

Add 1 sliced jalapeno pepper, 1/4 cup rice vinegar, 1/4 tsp Dijon mustard and 1/4 cup regular or light olive oil in a blender. Blend well.

Step 3

Step 4

Season the scallops with some sea salt, fresh ground black pepper and cayenne. Add some olive oil in a pan over high heat. Sear the scallops for 3-4 minutes per side.

Step 5

Place 3 seared scallops on a serving plate, surround them with some Orange Supremes. Spoon over the sauce. Enjoy!
