Recipe: Pan Seared Perch with Fried Capers

Ingredients

  • boneless Perch filets - skin-on
  • 2 tbl butter
  • 2 tbl capers
  • salt and pepper to taste

Instructions

Step 1

Make some small cuts or “scores” on the Perch filets' skin. Season them with salt and pepper.

Step 2

Chop 2 tbl capers.

Step 3

Put 2 tbl butter on a pan over medium heat. When the butter melts, add the chopped capers. Fry for 3-5 minutes. When the color of the forms change from white to light tan, put the Perch filets in the pan, skin side down.
Fry for 2 minutes, then flip the Perch filets over.

Step 4

Fry the Perch filets for another 1-2 minutes. Remove to serve. Served with Roasted Tomato Balsamic Vinaigrette, and Stellette Pasta Salad with Spring Peas and Lemon.
