Ingredients
- 1 can butter beans
- 3 tablespoons olive oil
- salt and fresh ground black pepper to taste
- red pepper flakes to taste
- couple sprigs of fresh herbs
- 1 tablespoon white wine or sherry vinegar
Instructions
Step 1
Rinse and drain the butter beans.
Step 2
Add 3 tablespoons olive oil in a non-stick pan over medium heat. When the oil is hot, add the butter beans. Turn the heat to medium low, and let them pan fried for 10 minutes.
Step 3
Meanwhile, crush and peel 2 cloves garlic.
Step 4
After pan frying for 10 minutes, the butter beans become golden. Add some red pepper flakes, some salt and pepper, couple sprigs of fresh herbs, and the garlic. Give it a stir. Let cook for 5 minutes. To finish, drizzle 1 tablespoon white wine or sherry vinegar. Give it a toss, you are ready to serve.
