Recipe: Orzo Pasta with Chicken and Sausage

Ingredients

  • 1/2 pound orzo pasta
  • 6 chicken thighs
  • 1 lb Linguisa sausage - or any spicy sausage
  • 1 quart chicken stock
  • 1 red bell pepper - diced
  • 1 green Pasilla or bell pepper - diced
  • 1/2 yellow onion - diced
  • 1 tbl paprika
  • 1 tbl cumin
  • 1 tbl Herb de Provence
  • 1 tsp salt
  • 1 bay leaf
  • fresh parsley

Instructions

Step 1

Cut the sausage into small pieces.

Step 2

Add 1 tbl paprika,
1 tbl cumin,
1 tbl Herb de Provence,
1 tsp salt,
1 bay leaf into a bowl. This is the Secret Spice Mix.

Step 3

Season the chicken thighs with 1 tsp salt and 1 tsp black pepper.
Put some olive oil in a ducth oven over medium heat.
Brown both sides of the chicken thighs in the dutch oven for about 8 minutes.
Remove and set aside.

Step 4

Add the sausage into the dutch oven, saute for about 3 minutes.
Dump in the Secret Spice Mix, Give it a mix. Saute for another 3 minutes.

Step 5

Then add in the chicken thighs, and 1 quart chicken stock. Bring it up to a simmer,
and simmer covered on low heat for 30 minutes.
After that, Transfer the chicken thighs and the sausage into a bowl, and the stock in another bowl.
The Dutch oven is empty.

Step 6

Add some oil, diced bell pepper, diced onion, and 1/2 pound orzo pasta into the ducth oven over medium heat.
Give it a stir. Add in 3 cups hot stock. Cook until the stock is almost absorbed, stir constantly.
Add more stock if needed. It takes about 15-20 minutes.
When the orzo pasta is 90% cooked, add the chicken and sausage. Give it a mix.
Turn off the heat. Cover and sit for 5 minutes.

Step 7

Then transfer to a serving bowl, topped with some fresh parsley. Enjoy.
