Recipe: Onion and Mushroom Soup

Ingredients

  • 1/4 cup unsalted butter
  • 2 pounds white or brown button mushrooms, sliced
  • 1 yellow onion, diced
  • 1 rounded tbsp flour
  • 6 sprigs fresh thyme
  • 2 cloves garlic, peeled, left whole
  • 4 cups chicken broth or stock
  • 1 cup water
  • 1 cup heavy cream
  • salt and fresh ground black pepper to taste

Instructions

Step 1

Take 6 sprigs fresh thyme, tied into a bundle with kitchen string, plus some picked leaves to garnish.

Step 2

Add 2 pounds sliced white mushrooms, 1/4 cup unsalted butter and a pinch of salt in a pot over medium high heat. Cook this for a long time until the water disappear. Turn the heat to med-low, add 1 diced yellow onion. Cook for 5 more minutes.

Step 3

Add 1 rounded tbsp flour in the pot. Stir around and cook for 2 minutes.
Add 6 sprigs fresh thyme, 2 cloves peeled garlic, 4 cups chicken broth and 1 cup water. Simmer on low heat for 1 hour.

Step 4

After simmering, take out the thyme bundle. Transfer the soup mixture in a blender, pull the blender on and off to blend the mixture well.

Step 5

Pour the soup mixture in the pot. Add 1 cup heavy cream, some salt and pepper. Mix well.

garnished with some thyme picked leaves.
