Recipe: Olympic Freestyle Homemade Pasta

Ingredients

  • 2 eggs
  • semolina flour
  • olive oil
  • cheeses

Instructions

Step 1

pile up the semolina flour on a table. Make it like a nest. Add 2 beaten eggs and a little bit olive oil in the centre of the flour.
whisk the eggs well. Add flour into the eggs occasionally.

Step 2

Then use a wood stick to roll the dough. When the dough gets thin, fold it, and roll it over.
Keep doing this for 5-6 times.

Step 3

When the dough becomes thin, cut it into 4 pieces. Roll each piece nice and thin, about 8.5 inch.
Use a pasta cutter to cut each piece into 7 long strips evenly.
Throw some corn flour on the strips, toss them with your fingers.

Step 4

Put the strips on a flat sheet near a window, open the window and let dry in the sun for a few hours.

Step 5

Put the Pasta strips into boiling salted water, boil for 1-2 minutes. When the strips float on the top of the water,
remove and drain the strips. Pour over the pasta sauce over it. Toss well.

Step 6

Transfer the pasta to a serving plate, topped with some cheeses.
