Step 1
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
Step 2
Cream the shortening and sugar together in a large bowl until they become light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
Step 3
In a separate bowl, sift baking soda, flour and salt together. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan.
Step 4
Bake for 50 - 55 minutes in preheated oven, or until a toothpick inserted into the center of the loaf comes out clean.
