Ingredients

  • 1 big chicken
  • 1 onion
  • 2 red bell pepper
  • 2 jalapeno
  • 2 Roma tomatoes
  • 2 cloves garlic
  • 1 tsp oregano
  • 1 bay leaf
  • cayenne
  • 2 cups chicken broth
  • 2 cups water
  • 1 cup sour cream or Mexican crema
  • salt and fresh ground black pepper to taste
  • fresh chopped cilantro

Instructions

Step 1

Put 1 big chicken into a large bowl. Add 2 cups chicken broth,
2 cups water,
1 cup sour cream, or Mexican crema
2 red bell pepper,
2 jalapeno,
2 Roma tomatoes,
some diced onion,
some cayenne,
1 bay leaf,
some salt and pepper.
Push the veggies down the broth.
Give it a mix.

Step 2

Simmer on low heat for 1 hour.
Turn it over, and simmer for another 30 minutes or more.

Step 3

Then remove the chicken, leave the broth in the pot over high heat.
Give rid of the fat in the broth.
Cut the chicken into serving pieces. Return the chicken pieces into the pot.
Add fresh chopped cilantro. Cook for about 1-2 minutes.
Turn off the heat.

Step 4

Transfer to a serving plate, enjoy.
