Recipe: Mexican Chicken Stew

Ingredients

  • 1 big chicken
  • 1 onion
  • 2 red bell pepper
  • 2 jalapeno
  • 2 Roma tomatoes
  • 2 cloves garlic
  • 1 tsp oregano
  • 1 bay leaf
  • cayenne
  • 2 cups chicken broth
  • 2 cups water
  • 1 cup sour cream, or Mexican crema
  • salt and fresh ground black pepper to taste
  • fresh chopped cilantro

Instructions

Step 1

Put the big chicken in a pot.
Add 1 diced onion,
2 diced red bell pepper,
2 diced jalapeno,
2 sliced Roma tomatoes,
2 diced cloves garlic,
1 tsp oregano,
1 bay leaf,
some cayenne,
2 cups chicken broth,
2 cups water,
1 cup sour cream, or Mexican crema
some salt and fresh ground black pepper to taste,
fresh chopped cilantro. Use a spatula to push the veggies down.
Simmer them covered on low heat for 1 hour.

Step 2

Turn over the chicken, and simmer covered for anther 30 minutes.

Step 3

After that, remove the chicken, leave the other things in the pot.
Turn the heat high. Get rid of the fat on the top of the sauce.

Step 4

Cut the chicken into pieces. Put the chicken pieces back into the pot.
Throw in some fresh chopped cilantro to garnish.
