Ingredients

  • 3 cups whole milk
  • 4 tablespoons butter
  • 3 tablespoons flour
  • salt and cayenne pepper to taste
  • pinch of freshly grated nutmeg
  • 1/2 teaspoon fresh thyme leaves

Instructions

Step 1

Melt the butter on medium low heat in a pot. Cook until it "sings". Stir around until it stop singing. At the point, add 3 tablespoons flour. Stir and cook for about 4 minutes.

Step 2

Hot Roux + Cold milk = No lumps. Stir in 3 cups whole milk. Keep stirring until mix well.
