Ingredients

  • Braised Ham Hock
  • 2 cups dry lentils
  • 2 cups diced onions
  • 1 cup diced celery
  • 1 cup diced carrots
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne
  • 1 quart chicken stock
  • 1 quart beef broth
  • salt to taste
  • fresh parsley

Instructions

Step 1

Put the Braised Ham Hock into a Dutch pan.
Add 1 quart chicken stock,
1 quart beef broth,
1 bay leaf,
1 tsp dried thyme,
1/2 tsp black pepper,
and 1/2 tsp cayenne. Give it a stir.
Turn the heat on, bring it to a simmer.
Then simmer covered on low heat for 1 hour 30 minutes.

Step 2

After simmering, add 2 cups diced onions,
1 cup diced celery,
and 1 cup diced carrots. Give it a stir.
Then simmer covered on low heat for 30 minutes.

Step 3

Add 2 cups dry lentils. Simmer covered on low heat for another 30 minutes.

Step 4

Then simmer uncovered for another 20 minutes.
Add some salt and pepper to taste.

Step 5

Serve with some chopped fresh parsley.
