Recipe: Lentil Soup with Braised Ham Hock
Ingredients
- Braised Ham Hock
- 2 cups dry lentils
- 2 cups diced onions
- 1 cup diced celery
- 1 cup diced carrots
- 1 bay leaf
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/2 tsp cayenne
- 1 quart chicken stock
- 1 quart beef broth
- salt to taste
- fresh parsley
Instructions
Step 1
Put the Braised Ham Hock into a Dutch pan.Add 1 quart chicken stock,
1 quart beef broth,
1 bay leaf,
1 tsp dried thyme,
1/2 tsp black pepper,
and 1/2 tsp cayenne. Give it a stir.
Turn the heat on, bring it to a simmer.
Then simmer covered on low heat for 1 hour 30 minutes.
Step 2
After simmering, add 2 cups diced onions,1 cup diced celery,
and 1 cup diced carrots. Give it a stir.
Then simmer covered on low heat for 30 minutes.
Step 3
Add 2 cups dry lentils. Simmer covered on low heat for another 30 minutes.
Step 4
Then simmer uncovered for another 20 minutes.Add some salt and pepper to taste.
