Recipe: Lemon Roast Chicken
Ingredients
- 1 big whole chicken
- 3/4 cup lemon juice
- 1/2 tsp salt
- pinch of cayenne
- pinch of cumin
- 1 tsp black pepper
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 1/2 to 2 cups chicken broth or stock
- sliced romaine
- salt and fresh ground black pepper to taste
Instructions
Step 1
Put 3/4 cup lemon juice,1/2 tsp salt,
pinch of cayenne,
pinch of cumin,
1 tsp black pepper,
2 tbsp olive oil,
and some salt
into a large bowl. Mix well.
Step 2
Put the whole chicken in, Let coated with the sauce mixture.Let sit for 30 minutes.
Step 3
Add some olive oil into a roasting pan. Place the chicken in.Pour the sauce mixture all over the chicken.
Brush the chicken with the sauce.
Step 4
Add 1 tsp dried rosemary and1 tsp dried thyme on the chicken.
Tie the back legs.
Add salt generously on the chicken.
Cook the chicken in an oven at 375F for 45 minutes.
Step 5
After done, take out the chicken.Add about 1 1/2 chicken broth or stock in the roasting pan.
Brush the chicken with the sauce in the pan.
Step 6
Return the chicken in the oven, cook 30 minutes or until done.After done, Brush the chicken with the sauce in the pan.
Cover the chicken, let rest 20 minutes.
Then pull the chicken out the pan, drain it.
Step 7
Add 1/2 chicken broth or stock in the roasting pan.Bring the sauce in the pan to a boil, reduce by about half.
Step 8
Slice romaine, put them into a large bowl. Throw in the cooked chicken pieces.Spoon sauce on them the chicken pieces. Add some salt and pepper on.
Stir well.
