Recipe: Lamb Burger with Eggplant and Tomato
Ingredients
- For the lamb burgers:
- 2 tablespoon olive oil
- 1 onion, diced fine
- 2 cups diced eggplant
- 3 cloves garlic, crushed
- 2 teaspoons tomato paste
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon dried oregano
- 1 teaspoon salt
- 1 pound ground lamb
- For the sauce:
- 1 tablespoon olive oil
- 1 tablespoon flour
- 1 cup milk
- 1/2 cup grated Parmesan
- pinch of nutmeg
- pinch of cayenne
- salt to taste
- 4 soft hamburger rolls, toasted
- tomato slices
- 1 tablespoon rice vinegar
- salt and fresh ground black pepper to taste
- 1 tablespoon thinly sliced or chopped mint leaves
Instructions
Step 1
Take 2 cups diced eggplant, remove skin, slice and dice them. Take 1 onion, dice well.
Step 2
Add the diced onion and some olive oil in a pan over medium high heat. Stir around, add some salt. cook until almost tender. Dump in the eggplant cubes. Turn the heat to medium. Stir and cook the eggplant cubes until tender.
Step 3
Add 3 cloves crushed garlic,1 teaspoon freshly ground black pepper,
1/2 teaspoon cumin,
1/4 teaspoon cinnamon,
1/4 teaspoon dried oregano,
and 1 teaspoon salt in a pan. Saute for 1 minute. Add 2 teaspoons tomato paste, Saute for a few minutes until tender. Then turn off the heat. Let cool down.
Step 4
Add 1 tablespoon olive oil and 1 tablespoon flour in a sauce pan over a heat. Stir and cook for a few minutes until foaming. Stir in 1 cup milk. Mix well. Add a pinch of nutmeg, a pinch of cayenne, some salt and pepper. Mix well. turn off the heat. Add 1/2 cup grated Parmesan. Mix well.
Step 5
Add 1 pound ground lamb, some salt, and the egg plant mixture in a mixing bowl. Use your hands to mix them. Divide it into 4 parts, and form each part into patty. Put them in a plate, cover it with a plastic. Refrigerate until use.
Step 6
Slice a tomato. Put the tomato slices in a plate. Season them with 1 tablespoon rice vinegar, 1 tablespoon thinly sliced or chopped mint leaves, some salt and fresh ground black pepper. Toss well, set aside.
Step 7
Season the patties with salt and pepper. Bake the patties with a little bit olive oil in a pan over med-high heat. Cook 4-5 minutes per side.
