Recipe: Key Lime Pie

Ingredients

  • Crust - enough for 2 pies, or one with bottom and top crust
  • 1 tsp salt
  • 2 cups flour
  • 3/4 cup shortening
  • 5-6 tbl ice water
  • Filling
  • 3 large eggs
  • 3 large juicy limes - 1/2 cup of juice
  • 1 can 14oz Sweetened Condensed Milk
  • 1 drop green food coloring
  • lime zest for garnish
  • whipped cream to top

Instructions

Step 1

Preheat oven to 400F.

Step 2

Put 1 tsp salt, 2 cups flour 3/4 cup shortening into a pot. Use a pastry cutter to cut the fat into the flour.
Then Pour 5-6 tbl ice water. Use a fork to mix them well. add more ice water if needed.

Step 3

Use hands to sweep, roll and hold, make the flour mixture into a ball. Spread some flour on a baking map.
Put half of the dough into the map, don't need to have the dough rest. Press it into 6-7 inch round.

Step 4

Rub some flour on a rolling pin, and use the rolling pin to roll on both directions of the dough until the dough becomes a
nice pie dough.

Step 5

Fold the pie dough in half, put the dough half way into a aluminum baking plate, and fold the half way over.
Fold the excess dough around the plate edge.

Step 6

Take one finger, and another finger against it to make curve edge. Use a fork to press the dough.
Bake the dough for 10-12 minutes at 400F. Then Remove and reduce oven to 350F.
Allow to cool completely before cooling.

Step 7

Heat 3 large juicy limes in a microwave for 10 seconds. Roll the limes on the table, this way will get more lemon juice.
Cut the lemons in half, and squeeze to get lemon juice.

Step 8

Put the lemon juice, 3 large eggs, and 1 can (14oz) Sweetened Condensed Milk into a big bowl. Then use a mixer to mix them well.
Add 1 drop green food coloring, Mix well.
Then pour the mixture into the dough. Bake for 30 minutes at 350F.

Step 9

To garnish, Topped with whipped cream and lime zest.
