Recipe: Italian Vegetable Stew - Giambotta
Ingredients
- 4 oz sweet Italian sausage
- 1/2 onion sliced
- 4 cloves garlic - chopped
- 1 tbl olive oil
- 36 oz. tomato puree
- 3-4 zuchinni
- 3-4 russet potatoes
- 2 bell peppers
- 1/2 pound green beans
- 2 pounds hot dogs
- 1/2 bunch fresh basil
- salt and pepper to taste
Instructions
Step 1
Add 4 oz sweet Italian sausage,1/2 onion sliced,
4 cloves garlic - chopped,
and 1 tbl olive oil into a pan. Slowly saute on low heat until onions and garlic turn translucent (do not brown garlic).
Turn off the heat and set aside.
Step 2
Then add36 oz. tomato puree,
3-4 zuchinni,
3-4 russet potatoes,
2 bell peppers,
2 pounds hot dogs (or any sausage),
1/2 bunch fresh basil,
and some salt and pepper to taste into a pot. Simmer covered for 15 minutes.
Step 3
Add 1/2 pound green beans (*blanched), the sausage mixture.Simmer covered for 15-20 minutes or until potatoes are tender.
