Recipe: Italian Toasty Pepper Corn Salad

- 1 lb frozen sweet corn
- 1 cup diced roasted red peppers
- 5-6 basil leaves - chiffonade
- cayenne - salt and fresh ground black pepper to taste
- For the dressing
- 1/2 cup mayo
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 clove crushed garlic
- 1/4 tsp dried Italian herbs
- 1/2 tsp sugar
- 1/2 tsp freshly ground black pepper
- 1/4 tsp salt
- 2 tsp water
Instructions
Step 1
Put 1/2 cup mayo,1/4 cup red wine vinegar,
1/4 cup olive oil,
1 clove crushed garlic,
1/4 tsp dried Italian herbs,
1/2 tsp sugar,
1/2 tsp freshly ground black pepper, and
1/4 tsp salt into a mixing bowl. Mix well.
For best results, refrigerate overnight.
Step 2
Put some vegetable oil and 1 lb frozen sweet corn in a flat pan, toast over medium heat until light golden brown.It takes about 15 minutes.
Turn off heat. remove and set aside.
Step 3
Slice the red peppers, and dice them into corn size.Then put them into a bowl, and dump in the warm corn.
Add some salt and some fresh ground black pepper. Give it a stir.
Then pour in 1/3 sauce in step 1. Stir well.
Set aside.
Step 4
Slice the crossed basil leaves. The put the basil leave slices and some cayenne into the corn bowl.Stir well.
