Recipe: Italian Homemade Chicken D-Arduini
Ingredients
- 8 chicken thighs - bone-in but skinned
- 8 chicken legs
- 6 cloves garlic
- 1/4 cup olive oil
- 1/3 cup chopped Italian parsley
- 1/4 cup chopped basil
- 1 tbl dried rosemary
- 1/2 tsp hot pepper flakes
- 2 oz anchovy fillets
- 1/2 plus 1/3 cup red wine
- 1/4 cup vinegar
- 1 1/2 tsp salt
Instructions
Step 1
Add 1/4 cup olive oil into a pan, then add 6 cloves minced garlic.Saute that on low heat. Add 2 oz anchovy fillets with oil. Stir for a few seconds. Then place 8 chicken thighs and 8 chicken legs in the pan.
Add 1/4 cup chopped basil, 1/2 tsp hot pepper flakes, 1 1/2 tsp salt,
1 tbl dried rosemary, and 1/3 cup chopped Italian parsley into the pan.
Put the Lid on. let it cook on low heat.
Step 2
Add 1/2 plus 1/3 cup red wine, and 1/4 cup vinegar. Give it a little stir.Turn the heat to medium. Simmer covered for 30 minutes.
After that, give it a toss, continue cooking uncovered, stirring occasionally.
Turn the heat to high so that the sauce is reduced and thicken.
Step 3
Add some black olive and mushroom slices, these are optional. Give it a nice stir.Reduce heat to low, and finish with additional 1/3 cup wine. Simmer for 10 minutes.
Then turn off the heat and mix well. Cover and let rest for 5 minutes.
