Recipe: Italian Frittata with Bacon and Greens

Ingredients

  • 8 eggs
  • 6 strips bacon
  • 1 clove garlic
  • 1 potato
  • 1 bunch Swiss chard
  • 1/3 cup grated parmesan cheese
  • 1/2 tsp red pepper flakes
  • salt and black pepper to taste

Instructions

Step 1

Peel and slice the potato.
Slice 1 clove garlic thin.

Step 2

Brown 6 strips bacon in a pan over medium heat.
Cook until the bacon strips become crispy.
Put the bacon strips on one side of the the pan.
Then use a paper towel to wipe out the excess oil.

Step 3

Add potato slices, 1/2 tsp red pepper flakes,
some salt and black pepper. Give it a stir.

Step 4

Add the garlic slices and a little bit water. Cook covered on medium heat until the potato slices become tender.
It takes about 10 minutes.

Step 5

Add 1 bunch chopped Swiss chard. Saute for about 3-5 minutes.
Pour down 8 eggs. Turn off the heat. Stir around.
Topped with 1/3 cup grated parmesan cheese.

Step 6

Broil in an oven for 3-4 minutes.
