Recipe: Italian Chicken Cacciatore

Ingredients

  • 2 tbsp olive oil
  • 1 whole roasting chicken - cut in quarters
  • salt and fresh ground black pepper to taste
  • 1 large onion
  • 8 oz fresh mushrooms - quartered
  • 4 cloves garlic - sliced
  • 3 springs rosemary
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 1 cup tomato sauce
  • 1/2 cup water
  • 2 red bell peppers - sliced
  • 2 green bell peppers - sliced

Instructions

Step 1

Add 2 tbsp olive oil into a Dutch oven. Put in the chicken quarters. Use med-high heat to brown the chicken.
Cook 7-8 minutes for each side.

Step 2

Meanwhile, Slice 1 large onion, so they hold together, slice the onions "with the grain" in the same direction as the lines of the onion, instead of across the onion like they are usually sliced.

Step 3

After the chicken is browned, remove and set aside. Put the mushrooms and the onion slices into the Dutch oven over med-high heat.
Add some salt and pepper. After cooking for 6-7 minutes, the mushrooms and onion slices become soft and tender. Add 4 cloves garlic,
Stir around. Add 3 springs rosemary, 1/2 tsp red pepper flakes, 1 tsp dried oregano, 1 cup tomato sauce,
1/2 cup water, some salt and pepper. Give it a stir.

Step 4

Put the chicken quarters on the top of the mixture. Pour over any chicken sauce with the chicken quarters. Add some salt and pepper.
Add 2 green bell pepper slices and 2 red bell pepper slices. Cover the Dutch Oven tightly.
Cook that in an oven for 1 hour and 15 minutes.

Step 5

After done, remove and serve. It goes very well with pasta and rice.
