Recipe: Italian Brodo di Manzo

Ingredients

  • 1 beef shank - about 2 inch thick
  • 1 onion
  • 3 cloves chopped garlic
  • olive oil
  • 3 tbl tomato paste
  • 1 quart beef broth plus 1 quart water
  • 1 bunch kale
  • 8 oz dried cheese tortellini
  • salt
  • black pepper and red pepper flakes to taste
  • parmesan cheese to garnish

Instructions

Step 1

Add some olive oil into a Dutch pan over med-high heat.
Season the beef shank with some salt and pepper.
Brown each side of the beef shank in the Dutch pan for 5-6 minutes.

Step 2

Remove the beef shank. Turn the heat to medium. Add 1 diced onion and
1 tbsp olive oil. Cook for 6-7 minutes, stir constantly.
Add a big pinch of salt, and 3 tbl tomato paste. Give it a stir.
Cook for a few minutes until dark brown.

Step 3

Add 3 cloves chopped garlic. Give it a stir. Add 1 quart beef broth plus 1 quart water.
Put the beef shank back in the pan. Add 1 bunch kale, some red pepper flakes to taste, and 8 oz dried cheese tortellini.

Step 4

Bring it to a gentle simmer, then simmer covered for 4 hours.
After that, there is some fat on the top, take off them.
Add 1 bunch chopped kale. Give it a stir. Cook for 10-15 minutes.
Add 8 oz dried cheese tortellini. Give it a stir. Cook covered for 11 minutes.

Step 5

Transfer to a serving bowl, garnish with some parmesan cheese.
