Recipe: How to Knead Bread

Ingredients

  • 2 cups sponge
  • 2 tsp salt
  • 1/2 tsp sugar
  • 2 tbsp olive oil
  • between 2 1/2 and 3 cups flour
  • let rise until doubled in size - between 6 and 12 hours

Instructions

Step 1

Add 2 cups sponge,
2 tsp salt,
1/2 tsp sugar,
2 tbsp olive oil,
and 2 1/2 to 3 cups flour into a mixing bowl. Mix well.

Step 2

Add another 1/2 cup flour, Mix well.
This is our dough.

Step 3

Put the dough on a floured board. Pour 1/2 cup flour over and under the dough.
Use the HTPP method ( half turn with the palm push) to knead the dough.

Step 4

When the dough gets sticky, sprinkle some four on the dough, and keep kneading.
Keep doing this for a few time.

Step 5

Here is the way to see if the dough is done. Get a small piece of the dough.
Stretch it thin, put it in front of a flash light. If you can see the flash light through, and the dough doesn't tear, it is done.
