Ingredients

  • 3 cups cooking liquid from turkey pan (fat removed)
  • 4 cups truck stock from the neck
  • 1/2 cup cooked onions from pan
  • 2-3 tbsp turkey fat
  • 1 tbsp butter
  • 1/4 cup flour
  • salt and pepper to taste
  • 1 tbsp chopped sage

Instructions

Step 1

Remove the turkey from the oven, take off the foil.
Strain the turkey stock. we got 4 cups stock.

Step 2

Cover the turkey with a foil loosely, and warm it for 40 minutes.

Step 3

Screen of the turkey fat off the turkey stock.

Step 4

Put 2-3 tbsp turkey fat and 1/2 cup cooked onion in a saute pan. When it comes to a boil, add 1/4 cup flour. Mix well. Saute for 5 minutes. Then add turkey stock and the neck stock. Bring it to a simmer, add 1 tbsp vinegar. Simmer and reduce by half. Don't add salt until it is done.

Step 5

Throw in 1 tbsp chopped sage. Stir well.

Step 6

Chop the turkey, and put it on the serving plate. Spoon over the sauce. Enjoy!
