Recipe: How to Cook Turkey Part 2
Ingredients
- 3 cups cooking liquid from turkey pan (fat removed)
- 4 cups truck stock from the neck
- 1/2 cup cooked onions from pan
- 2-3 tbsp turkey fat
- 1 tbsp butter
- 1/4 cup flour
- salt and pepper to taste
- 1 tbsp chopped sage
Instructions
Step 1
Remove the turkey from the oven, take off the foil.Strain the turkey stock. we got 4 cups stock.
Step 2
Cover the turkey with a foil loosely, and warm it for 40 minutes.
Step 3
Screen of the turkey fat off the turkey stock.
Step 4
Put 2-3 tbsp turkey fat and 1/2 cup cooked onion in a saute pan. When it comes to a boil, add 1/4 cup flour. Mix well. Saute for 5 minutes. Then add turkey stock and the neck stock. Bring it to a simmer, add 1 tbsp vinegar. Simmer and reduce by half. Don't add salt until it is done.
Step 5
Throw in 1 tbsp chopped sage. Stir well.
