Ingredients

  • 2 lbs ground beef
  • 2 cups diced peppers of your choice
  • 1 16-oz jar salsa
  • 1 tsp salt
  • 1 tsp chipotle pepper
  • 1/2 tsp dried oregano
  • 4 oz cheddar cheese, divided
  • 4 oz jack cheese, divided
  • 2 boxes Jiffy corn muffin/bread mix
  • 2 eggs
  • 2/3 cup milk
  • 8 oz frozen corn, thawed

Instructions

Step 1

Add 2 lbs ground beef, 2 cups diced peppers of your choice,
1 16-oz jar salsa, and 1 tsp salt in a dutch oven over medium heat. Give it a stir.

Step 2

Add 1 tsp chipotle pepper, 1/2 tsp dried oregano into the dutch oven.
Give it a stir. Let cook while we doing the other work.

Step 3

Add 2 boxes Jiffy corn muffin/bread mixture,2 eggs, and 2/3 cup milk in a mixing bowl. Mix well. Then transfer half of the mixture to a baking pan.
Spread well. Add 8 oz frozen corn on the top, spread well. Add 2 oz cheddar cheese, and 2 oz jack cheese on the top, spread well. Add the beef and pepper mixture on the top, spread well.

Step 4

Put the cheddar cheese, and 2 oz jack cheese in the bowl with the corn and egg mixture.
Mix well. Then Spread the mixture on the baking pan.

Step 5

Put the baking pan in an oven, cook for 1 hour at 350F.
