Recipe: Homemade Scone

Ingredients

  • 8 ounces by weight all-purpose flour (about 1 3/4 cups)
  • 4 teaspoons baking powder
  • 1/4 cup white sugar
  • 1/8 teaspoon salt
  • 5 tablespoons unsalted butter
  • 1/3 cup dried currants
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 egg plus 1 tablespoon milk for the wash

Instructions

Step 1

Add 8 ounces all-purpose flour,
4 teaspoons baking powder,
1/4 cup white sugar,
and 1/8 teaspoon salt into a mixing bowl. Whisk well.

Step 2

Add 5 tablespoons unsalted butter ( ice cold ) in the mixing bowl.
Use a pastry cutter to mash and mix the butter with the flour.
Make sure always to split eights.

Step 3

When the mixture are consistent, add 1/2 cup milk,
and 1/3 cup dried currants in the bowl. Use the tip of a fork to stir together. Don't over mix them. As soon as they come together, stop.

Step 4

Transfer the mixture on a floured board, make them into a rectangle shape. Make sure you have flour on your fingers and the board.
Use a knife to cut it into 8 squares, then place the squares on a baking pan.
Give each square a egg wash on the top.

Step 5

Bake in an oven at 400F for about 15 minutes.

Step 6

Cool before serve.
