Recipe: Homemade Scone

Ingredients

  • 8 ounces by weight all-purpose flour (about 1 3/4 cups)
  • 4 teaspoons baking powder
  • 1/4 cup white sugar
  • 1/8 teaspoon salt
  • 5 tablespoons unsalted butter
  • 1/3 cup dried currants
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 egg plus 1 tablespoon milk for the wash

Instructions

Step 1

Add 8 ounces all-purpose flour, 4 teaspoons baking powder, 1/8 teaspoon salt in a large mixing bowl. Whisk well.

Step 2

Add 1/4 cup white sugar, 5 tablespoons unsalted butter( use ice-cold butter),
Use a cutter to mix well. Tip: always split eights.

Step 3

Add 1/2 cup milk, and 1/3 cup dried currants. Use a fork to mix well.
Transfer the mixture to a floured board. Make it into a square shape.
Make sure you have enough flour on you fingers and board to prevent from sticking.

Step 4

Fold the 2 sides in, make it into a rectangle shape. Use a knife to cut it
into 8 squares. Place them into a baking sheet. Brush the top of each square with egg and milk mixture.

Step 5

Bake them in an oven at 400F for about 15 minutes. After that, transfer to a cooling racks. Let cool until warm.
