Recipe: Homemade Pizza Dough
Ingredients
- For the Pizza Dough
- 2 teaspoons dry yeast
- 3/4 cup lukewarm water
- 2/3 cup bread flour
- The Rest of the Dry Ingredients
- 4 cups unbleached white flour
- 1/4 cup rye flour
- 1 teaspoon salt
- 1/3 cup olive oil
Instructions
Step 1
Add 2 teaspoons dry yeast,3/4 cup lukewarm water,
and 2/3 cup bread flour into a mixing bowl. Mix well.
Put the bowl into a warm spot, sit for 30 minutes.
This is our sponge.
Step 2
Meanwhile, add 4 cups unbleached white flour, 1/4 cup rye flour,and 1 teaspoon salt into another mixing bowl. Mix well and set aside.
Step 3
Add 1 cup flour mixture and 1 cup cold water into the sponge. Mix well. Let sit for another 30 minutes in a warm spot.
Step 4
Add 2/3 of the remaining flour mixture into another bowl, use a spatula to scrape the sponge into the bowl.Fold and stir to incorporate the sponge into the flour with the spatula.
when they are incorporated, add the remaining flour mixture, and 1/3 cup olive oil. Mix well.
Step 5
Add flour to a cutting board. Put the dough on the board, knead the dough for 5 minutes.
Step 6
Put the dough into a large bowl, add 1 tbsp olive oil. coat the dough with olive oil.Cover the bowl with a kitchen towel, put it into a warm place for 2 hours. It will double its size.
Step 7
After that, put the dough into a floured board, use a cutter to cut it into 6 equeal pieces.Roll each piece into a ball. Rub some olive oil on the balls. Put each ball into a zip lock bag.
Refrigerate overnight to double its size.
