Recipe: Homemade Pizza Dough

Ingredients

  • For the Pizza Dough
  • 2 teaspoons dry yeast
  • 3/4 cup lukewarm water
  • 2/3 cup bread flour
  • The Rest of the Dry Ingredients
  • 4 cups unbleached white flour
  • 1/4 cup rye flour
  • 1 teaspoon salt
  • 1/3 cup olive oil

Instructions

Step 1

Add 2 teaspoons dry yeast,
3/4 cup lukewarm water,
and 2/3 cup bread flour into a mixing bowl. Mix well.
Put the bowl into a warm spot, sit for 30 minutes.
This is our sponge.

Step 2

Meanwhile, add 4 cups unbleached white flour, 1/4 cup rye flour,
and 1 teaspoon salt into another mixing bowl. Mix well and set aside.

Step 3

Add 1 cup flour mixture and 1 cup cold water into the sponge. Mix well. Let sit for another 30 minutes in a warm spot.

Step 4

Add 2/3 of the remaining flour mixture into another bowl, use a spatula to scrape the sponge into the bowl.
Fold and stir to incorporate the sponge into the flour with the spatula.
when they are incorporated, add the remaining flour mixture, and 1/3 cup olive oil. Mix well.

Step 5

Add flour to a cutting board. Put the dough on the board, knead the dough for 5 minutes.

Step 6

Put the dough into a large bowl, add 1 tbsp olive oil. coat the dough with olive oil.
Cover the bowl with a kitchen towel, put it into a warm place for 2 hours. It will double its size.

Step 7

After that, put the dough into a floured board, use a cutter to cut it into 6 equeal pieces.
Roll each piece into a ball. Rub some olive oil on the balls. Put each ball into a zip lock bag.
Refrigerate overnight to double its size.
