Recipe: Homemade Hollandaise
Ingredients
- 1 1/2 stick of unsalted butter
- 2 egg yolks
- 1/2 lemon
- salt to taste
- cayenne or tabasco sauce to taste
Instructions
Step 1
Add 2 egg yolks and the juice of lemon in a mixing bowl. Whistle well.Turn the burner on low, put the bowl on the flame.
Cook and keep stirring. When the mixture gets thicken, and you get resistance,
turn off the heat. Keep stirring even after the heat is off, this prevents sticking to the bottom.
Step 2
Melt 1 1/2 stick of unsalted butter.Put the bowl on a mat. Keep stirring, and stir in the butter.
