Recipe: Homemade Cheese

Ingredients

  • 1 quart fresh and local whole milk
  • 1 cup active-culture buttermilk
  • 2 tsp lemon juice or white vinegar - more if needed
  • 3/4 tsp salt to taste

Instructions

Step 1

Pour 1 quart fresh, local whole milk into a sauce pan over a very low heat. Stir regularly.

Step 2

Slowly bring it up to 175F. Pour in 1 cup active-culture buttermilk,
2 tsp lemon juice or white vinegar, more if needed.
Then turn off heat!
Stir slowly.
Sit for 10 minutes.

Step 3

Meanwhile, Put a drain bowl over a stock pot, and place 4 layers of cheesecloth over the drain bowl.
Take the cheese mixture onto the cheesecloth, let drain for 5 minutes.

Step 4

Then gather that up, tie up the top, and tie it in a wood stick. Hand it over the stock pot.
Sit for half an hour to drain out.

Step 5

After half an hour, unwrap the cheesecloth, that is the cheese inside the wrap.
Put the cheese inside a large bowl, add some salt. Mix well.

Step 6

You can eat fresh if you want. Or transfer to a bowl, cover and leave overnight to develop flavour.

Step 7

Serve with olive oil.
