Recipe: Herb and Potato Chips

Ingredients

  • fresh herb leaves (Italian parsley, oregano, tarragon, etc)
  • 1 large russet potato
  • 2 tbl olive oil
  • salt to taste

Instructions

Step 1

Peel the potato.
Use a vegetable slicer to slice the potato into paper thin slices.
Stack the slices.

Step 2

Brush olive oil on a mat, arrange 1 layer of slices. Place 3 fresh herb leaves on a slice. Cover the slice with another slice. Use your fingers to press out the air. Make a few of this. Brush olive oil on the top of each unit.

Step 3

Bake at 340F for 20-30 minutes.
