Recipe: Halibut Steaks with Bacon Dressing
Ingredients
- 2 halibut steaks (about 3/4 to 1 inch thick)
- 1/2 lemon
- 1/3 cup seasoned rice vinegar
- 4 strips of bacon
- fresh parsley to taste (about 1/2 bunch for me)
- salt and pepper to taste
- I served this on baby romaine, but any greens would be nice
Instructions
Step 1
Slice the 4 strips of bacon into small pieces. Put them in a saute pan over med-low heat. Saute for a few minutes.
Step 2
Meanwhile, Season the 2 halibut steaks with salt and pepper.
Step 3
When the bacon pieces are crispy, remove them. Put the halibut steaks in the same pan, turn the heat to med-high. Cook for about 4 minutes or 75% done.After that, remove the halibut steaks.
Step 4
Add 1/3 cup seasoned rice vinegar in the same pan. Turn the heat to low.Add The juice of 1/2 lemon. Bring it to a boil, return the bacon pieces and the halibut steaks in the pan. Peel the halibut steaks. Add 1/2 bunch chopped fresh parsley.
