Recipe: Grilled Chicken with Five Spice Sauce
Ingredients
- 1 chicken
- For the marinade:
- 1/2 lime, juiced
- 2 teaspoons grated fresh ginger
- 3 cloves garlic crushed
- 2 teaspoons sambal, or other red chili sauce
- 1 tablespoon fish sauce
- 1 tablespoon seasoned rice vinegar
- 1 teaspoon soy sauce
- 1 tablespoon 5-spice powder
- For the sauce:
- 1/2 lime, juiced
- 1 teaspoon fish sauce
- 1 teaspoon sambal, or other red chili sauce
- 1/3 cup seasoned rice vinegar
- all these can and should be adjusted to taste
Instructions
Step 1
Make marinade:Add the juice of 1/2 lime,
2 teaspoons grated fresh ginger,
3 cloves crushed garlic,
2 teaspoons sambal, or other red chili sauce,
1 tablespoon fish sauce,
1 tablespoon seasoned rice vinegar,
1 teaspoon soy sauce,
and 1 tablespoon 5-spice powder in a bowl. Mix well.
Step 2
Take half chicken. Use a knife to make some slashes on the thick parts. Put it in the bowl with the marinade. Toss well.
Step 3
Transfer the chicken and the marinade in a zip-lock bag. Squeeze out the air and zip it. Marinade for 6-9 hours, overnight is fine.
Step 4
Cook the chicken on a hot grill. Then brush the chicken with the left-over marinade. Cover the grill, and cook for 35-40 minutes over medium heat.
Step 5
Make Sauce:Add the juice of 1/2 lime,
1 teaspoon fish sauce,
1 teaspoon sambal, or other red chili sauce,
and 1/3 cup seasoned rice vinegar in a small bowl. Mix well and adjust taste.
