Recipe: Green Broccoli Salad

Ingredients

  • 1 1/2 pounds broccoli
  • 3 cloves garlic, mashed
  • 2 tbsp lemon juice
  • 2 tbsp rice vinegar
  • 1/2 tsp Dijon mustard
  • 1/3 cup olive oil
  • red pepper flakes to taste
  • salt and pepper to taste

Instructions

Step 1

Cut the broccoli stem off the top, then cut the stem and the top in quarters.

Step 2

Bring a pot of salted water to a boil. Put the broccoli in the pot. Boil for about 5-6 minutes. Then Transfer them in cold water, drain them for at least half an hour.

Step 3

Add 3 cloves mashed garlic,
2 tbsp lemon juice,
2 tbsp rice vinegar,
1/2 tsp Dijon mustard,
1/3 cup olive oil,
some red pepper flakes,
and some salt and pepper in a mixing bowl. Whisk well.

Step 4

Transfer the broccoli in a bowl, pour in the sauce. Toss well.

Step 5

Serve immediately or refrigerate for 1/2 - 1 hour.
