Recipe: Garlic Parmesoan Croutons

Ingredients

  • 4 cloves garlic, minced very fine
  • 1/2 cup olive oil
  • 1 (8-ounce) loaf French baguette or similar style bread
  • 3/4 cup finely grated
  • 1/2 teaspoon dried Italian herbs
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • pinch of cayenne

Instructions

Step 1

Add 1/2 cup olive oil and 4 cloves minced garlic in a bowl. Let infuse for a few hours at room temperature.

Step 2

Cut the French baguette into half then into half, then into quarters. Cut each quarter into 1-2 inch pieces. Throw them into a bowl. Strain the garlic and olive oil mixture over the baguette pieces. Toss well.

Step 3

Dump in 3/4 cup finely grated "real" Parmesan cheese (sold as Parmigiano-Reggiano),
1/2 teaspoon dried Italian herbs,
1/2 teaspoon paprika,
1/2 teaspoon salt,
1/2 teaspoon freshly ground black pepper,
and pinch of cayenne in the bowl. Toss well. Dump the whole mixture on a mat over a baking sheet. Spread them in a one layer.

Step 4

Bake at 300F for 15 minutes. Then toss and bake for another 15 minutes.
Remove, use a spatula the push the bread pieces together, add some Parmesan cheese. Return to oven and cook until "done'.
