Recipe: French Asparagus Pie
Ingredients
- 1 pound fresh asparagus
- 2 tbsp butter - plus extra for the casserole dish
- 1/2 cup flour
- 3/4 tsp sugar
- 1 1/4 cup milk
- 3 large eggs
- 1 tsp chopped fresh thyme
- 3/4 tsp salt
- pinch of fresh ground black pepper
- 1 tbsp lemon zest
Instructions
Step 1
Take 1 pound fresh asparagus, cut off the tips. Then cut into 2-inch pieces.
Step 2
Make batterAdd 1/2 cup flour, some salt, some sugar, some pepper, 1 tsp chopped fresh thyme and 1 1/4 cup milk in a mixing bowl.
Whisk up until the flour is absorbed and resolved.
Add 3 large eggs and 1 tbsp lemon zest, whisk together.
Step 3
Add 2 tbsp butter into a pan over medium heat. When the butter foams and melts, add asparagus and a pinch of salt.Cook for 1.5 minutes until the asparagus turns dark green.
Step 4
Now butter a casserole dish or pie dish, dump in the asparagus, pour in the batter. Then bake in an oven at 350F for 45 minutes.
