Recipe: French Asparagus Pie

Ingredients

  • 1 pound fresh asparagus
  • 2 tbsp butter - plus extra for the casserole dish
  • 1/2 cup flour
  • 3/4 tsp sugar
  • 1 1/4 cup milk
  • 3 large eggs
  • 1 tsp chopped fresh thyme
  • 3/4 tsp salt
  • pinch of fresh ground black pepper
  • 1 tbsp lemon zest

Instructions

Step 1

Take 1 pound fresh asparagus, cut off the tips. Then cut into 2-inch pieces.

Step 2

Make batter
Add 1/2 cup flour, some salt, some sugar, some pepper, 1 tsp chopped fresh thyme and 1 1/4 cup milk in a mixing bowl.
Whisk up until the flour is absorbed and resolved.
Add 3 large eggs and 1 tbsp lemon zest, whisk together.

Step 3

Add 2 tbsp butter into a pan over medium heat. When the butter foams and melts, add asparagus and a pinch of salt.
Cook for 1.5 minutes until the asparagus turns dark green.

Step 4

Now butter a casserole dish or pie dish, dump in the asparagus, pour in the batter. Then bake in an oven at 350F for 45 minutes.

Step 5

Cool to room temperature before serve.
