Recipe: Follow the Sourdough - Day 7

Ingredients

  • 2 cups sponge
  • 2 tsp salt
  • 1/2 tsp sugar
  • 2 tbsp olive oil
  • between 2 1/2 and 3 cups flour

Instructions

Step 1

Add 2 cups sponge,
2 tsp salt,
1/2 tsp sugar,
2 tbsp olive oil,
and 1 cups flour into a big mixing bowl.
Mix well, and they are going to form into a dough.
Add another cup of dough, mix well.

Step 2

Put the dough on a floured board. Add 1/2 cup flour on and under the dough.
Then use the palm push method: half turn, palm push.

Step 3

Sprinkle some flour on the dough if it getting sticky.
Keep kneading it until the the dough is done.
Here is the way to test if it is done. Get a piece of this dough, stretch it in front a flash light.
If you can see light through it, and it doesn't tear. It is done.

Step 4

let rise until doubled in size - between 6 and 12 hours
